SOUS CHEF

JOB DESCRIPTION

The Sous Chef coordinates with the Kitchen Manager to oversee the day-to-day work of prep cooks and dishwashers to ensure that all required items are prepared according to company standards. They manage inventory as directed, attend relevant meetings, and are responsible for the quality of product. They help drive solutions to guest challenges and ensure an excellent customer experience. They will be responsible for the execution of dinner service. The Sous Chef reports directly to the General Manager.

DUTIES

• Delegate to and oversee the BOH team when the Kitchen Manager is absent

• Organize and assign prep lists

• Oversee execution tasks through direct oversight of the back of house team

• Capable and prepared to fill any position, including delivery, as needed to ensure smooth and continuous operations

• Complete bi-weekly inventory as directed

• Receive product, review invoices, and stock inventory according to company protocol

• Assist with menu creation, driving creative solutions to guest challenges, communicating ideas effectively to the owner and kitchen manager.

• Run lead on dinner service, menu, plating and training.

• Monitor dated product and utilize for specials to reduce loss.

• Maintain clean and sanitary work spaces according to health and safety rules

• Manage food quality and safety according to health and safety rules and company Protocols

• Ensure cleanliness of kitchen and ensure completion of opening and closing duties and checklists

REQUIRED SKILLS

& KNOWLEDGE

• 3 years minimum relevant experience required, more preferred.

• 1 year of direct supervision required

• Ability to stay organized, especially during peak business

• Excellent, consistent attention to detail

• Very strong verbal communication skills

• Ability to coach and train team members of all levels

• Ability to stand for up to 10 hours

• Ability to repeatedly lift 50 lbs.

• Current driver’s license and clean driving record

• Servsafe certification within 60 days of employment

• Work in various weather conditions, including summer months and outdoor sites

• Maintain a professional work appearance

• Strong ambiguity, and problem-solving skills

• Ability to maintain composure through high stress and peak business
